Devilled Crab with Hot Avocado

Ingredients:

  • 2 teaspoons Dijon mustard
  • 2 pinches cayenne pepper
  • 125ml creme fraiche
  • 3 dessert spoons mayonnaise
  • Juice and rind of 1 lemon
  • 3 dressed crabs (white and dark meat)
  • Salt and pepper
  • 3 ripe avocado pears
  • 6 dessert spoons of fresh breadcrumbs
  • Method

    In a bowl, mash all ingredients together, with the exception of the avocado and breadcrumbs.  Keep the mixture course but well mixed. Season with a little salt and ground black pepper.

    Cut the avocado’s in half and remove the stones and skin.  Cut each half into about 4 slices and arrange in the bottom of each small ovenproof, gratin dish.

    Top with the crab mix, dividing between the 6 dishes and sprinkle with a scattering of breadcrumbs.

    Place in a hot oven 400F/200c/ Gas 6 for about 15 mins and then under a hot grill to brown and crisp the breadcrumbs.

    Alternatively store in the fridge until required and allow an extra 5 minutes in the oven.
